Dina's home-made mayonnaiseSeparate an egg putting the yolk into a mixing bowl on its own. Take a small cupful of your favourite olive oil in one hand and a fork in the other and slowly drizzle the oil onto the egg yolk as you are stirring with the fork. Very very slowly. (it will curdle if you do this too hastily) Stir in a few drops of freshly-squeezed lemon juice when you have the required volume of mayonnaise in your bowl. Season.
