Roughandready cake

10 oz of mixed dried fruit, soaked overnight in Greek red wine
2 mugfulls of plain flour
1/2 mug of brown sugar
2 eggs
3/4 mug of light organic olive oil
1/4 lb of cottage cheese (optional) - natural yoghurt would be ok instead
up to 1 mug of organic milk
mixed spice

Put these ingredients into a mixing bowl in this order:
flour, sugar, olive oil, eggs and mixed spice.
Mix thoroughly with a large fork, and as the mixture
gets more and more difficult to stir, gradually add milk
until the fork moves round smoothly.
Add the cottage cheese, then the soaked, mixed fruit

Lightly oil a cast iron pot and pour/scrape in the mixture.
Dot the top with half a dozen whole walnuts.

Bake at 160C for 2 1/2 hours.
